Le premier est un entremet associant cream cheese, confit de poire, de passion et de rose, avec pour fond, un biscuit Joconde allégé, imbibé d’un punch aux fruits de la passion et pour contour un sablé viennois friable, croustillant à souhait. « Le cœur de Saint-Valentin » (310 gr) : 18€

Angelina joue la carte de la poésie amoureuse en faisant rimer finesse et délicatesse avec un parchemin en chocolat blanc dans lequel un croustillant au chocolat blanc et citron vert vient se conjuguer à une mousse à la framboise et d’un moelleux au citron et d’un confit au citron vert ; les moelleux vers formant ainsi un savoureux quatrain pour la plus tendre des déclarations. « Mot d’amour » 7€ en boutique – 9,20€ sur place et 7,50 € en vente à emporter – www.angeline-paris.fr
Dalloyau se met au tag en sollicitant le talent du street artist « L’amour court les rues ». Résultat ? Une œuvre d’art éphémère composée à partir d’un croustillant de fruits secs, caramélisé au miel Ile de France et d’un biscuit financier aux fruits secs et aux éclats de chocolat au lait, le tout agrémenté d’une mousse au miel Ile de France parfumée à la vanille de Madagascar avec une pointe de pollen, recouvert d’un caché en chocolat blanc portant l’inscription « L’amour court les rues ».
